Easy Chicken and Broccoli Casserole
Serves 4
Ingredients:
3 Good size chicken breasts
1 & 1/2 Cups of frozen or fresh broccoli (not the stems)
4 Cups of instant brown rice
1 Can of cream of mushroom soup
1/2 Cup of fat free sour cream
/2 cup of shredded low fat old cheddar cheese
Franks red hot sauce
Creole seasoning or seasoning salt
Pepper
Directions:
1. Preheat oven to 400 degrees F and find a medium sized casserole dish
2. Chop the chicken breasts into bite size chunks and cook on a pan until cooked through (add creole or seasoning salt to chicken to taste).
3. Steam broccoli on stove or in microwave until tender
4. Cook minute rice on stove
5. Open can of mushroom soup and put in small mixing bowl. Add 1/2 cup of sour cream, a few sprinkles of Franks red hot sauce and a few shakes of pepper. Mix well.
6. Put a thin layer of rice on bottom of casserole dish, sprinkle chicken and broccoli on top, put a second layer of rice on top of this, pour soup mixture over top and sprinkle cheese over everything.
7. Bake for about 15-20 minutes or until cheese is fully melted
Salad makes an excellent side dish!
