Banana Bread

On the topic of magic bullets, I thought I would share one of my favourite recipes that I just incidently love to use my magic bullet for. I pulled this banada bread recipe off the web originally, but after looking it over I decided that it needed some changes. The recipe had too much sugar in it, it needed to be made with whole wheat flour (since that was all I had at the time) and it really needed an extra kick. Thus so, I really consider this recipe my own, and it's some of the best banana bread I've ever had.

What you'll need:

1&1/2 cups of flour (I recommed whole wheat for more fibre!)
3/4 cups sugar
1/4 cup butter or margarine
1 tsp vanilla
1 tsp baking soda
1/2 tsp baking powder
1 egg
3 ripe bananas (the riper the better, in my opinion)
2 tsp cinnamon (or to taste)

fun options: add walnuts, raisans or chocolate chips, or top with coconut or more cinnamon!

Cooking Instructions:

Oven temperature: 350 degrees F.
Baking Time 50-60 minutes

Mix together all dry ingredients into a bowl
Cut in the butter
Mash bananas together in blender or magic bullet
Mix the bananas, egg, vanilla and cinnamon into the dry mix and stir until all ingredients are well combined
Spoon mixture into a lightly greased bread pan
Cook as directed on the middle rack.

The best thing about this recipie is that it is really quick. I can throw it together in less than 10 minutes. The other great thing about it is that it's the perfect way to use up over-ripe bananas!

  1. Sweet! I love making banana bread too (which is good because I have about twenty very ripe frozen banana's in my freezer). I always buy banana's when I'm grocery shopping but only occasionally eat them (habit). I'll have to try this recipe using my magic bullet wannabe blender set!

  2. I made your banana bread, and it was very good! Thanks for sharing!
I only put chocolate chips in half of it (my half - I left Justin's half plain because he doesn't like chocolate). But I ate my half really fast, and now I'm eating the plain half too. I've gotta say, chocolate chips in banana bread make it really amazing.
I've also been putting maple cranberry butter on my banana bread, because I still have tons of that left after making pumpkin waffles long ago.
I bought lots more bananas, so I'm sure I'll be making more banana bread again soon!
